Cultivées dans les oliveraies marocaines, les olives Picholines sont récoltées à un stade de maturité précoce, ce qui leur confère leur couleur vert vif et leur goût frais et herbacé. Après la récolte, elles sont soigneusement lavées et trempées dans une solution d’eau salée pour les conserver et éliminer toute amertume indésirable.L’ajout d’une petite quantité d’huile végétale à la marinade des olives Picholines leur confère une texture légèrement moelleuse tout en rehaussant leur saveur naturelle. Cette combinaison d’ingrédients simples permet de préserver l’authenticité et la fraîcheur des olives, offrant ainsi une expérience gustative véritablement méditerranéenne.
